Banana, Apple, Almond Baked Oatmeal

This is my first time ever making or tasting baked oatmeal and let me tell you… It did not, I repeat, did not, disappoint. This warm bowl of creamy sweet goodness was so satisfying and so delicious! I could eat this everyday. I took the baked oatmeal recipe from deliciouslyella.com and adapted it to what I have in the house. She used banana, blueberries, and walnuts which also sounds a-ma-zing. Definitely check out her blog if you haven’t already because it’s awesome. I love the flavor of baked apple and banana and the almonds add such a great crunch. Makes 1 serving:

  • 1/2 cup oats
  • 1 banana
  • 3 slices apple chopped
  • handful of almonds crushed into smaller pieces
  • 1/4 cup raisins
  • a little less than 1/4 cup of almond milk
  • 1 tbsp cinnamon

Preheat oven to 370 F.

First, place your oats in a bowl and just cover them with boiling water and let sit for 10 mins. Once the water is absorbed, mix in half the banana and all of the other ingredients. Pour into an oven-safe dish and top with the remaining banana along with more almonds if you desire. Bake for 20 mins. Remove from oven, close your eyes, take a big whiff, smile, open eyes, and then devour. Thank me later 🙂

Pumpkin Pie Oatmeal

For all you fall lovers out there like myself, this one is a real treat. I love pumpkin anything. Pumpkin pie, pumpkin lattes, pumpkin bread, pumpkin soup, and now pumpkin oatmeal. It’s a yummy filling and nutritious breakfast for those chilly fall mornings. So without further ado:

  • 1/2 cup oats
  • 1 cup milk or water
  • 2 tbsp greek yogurt
  • 3-4 tbsp of 100% pumpkin puree (depending on how pumpkin-y you like it)
  • 2-3 tsp or to taste of sweetener (I used honey but maple syrup or coconut sugar would be splendid)
  • few dashes each of ground cinnamon, nutmeg, and cloves (You can use whatever you have on hand. Ginger and allspice would also be really nice.)

Cook the oats with milk or water for like a minute and then add everything else and stir. Cook until the liquid is absorbed and it’s nice and creamy. Throw all your favorite toppings on and devour! I put banana, apple, dried fig, crushed walnuts, and peanut butter. Enjoy!
